Tayberry Crumble Bars
Buttery oat crumble bars layered with a sweet-tart tayberry filling for an easy homemade dessert.

Tayberry crumble bars combine juicy, sweet-tart tayberries with a buttery oat crust and crisp crumble topping. The berries soften into a jammy filling as the bars bake, while the oat mixture provides a rich and slightly crunchy contrast. These bars are ideal for afternoon tea, picnics, lunchboxes or a simple homemade dessert. For clean slices, allow the bars to cool completely before cutting. Fresh tayberries work especially well, but frozen berries can also be used without thawing if fresh fruit is unavailable.
Ingredients
- 2.5 cups Fresh Tayberries
- 1.5 cups Rolled Oats
- 1.5 cups All-Purpose Flour
- 0.75 cups Brown Sugar
- 0.75 cups Unsalted Butter
- 2 tablespoons Cornstarch
- 1 tablespoon Fresh Lemon Juice
- 1 teaspoon Vanilla Extract
- 0.25 teaspoon Salt

Instructions
Preheat the oven to 180°C and line a square baking pan with parchment paper.

Combine the rolled oats, flour, brown sugar and salt in a mixing bowl.

Add the melted butter and vanilla extract, then mix until coarse crumbs form.

Press about two-thirds of the crumble mixture firmly into the bottom of the prepared pan.

Gently combine the tayberries, cornstarch and lemon juice in a separate bowl.

Spread the tayberry mixture evenly over the prepared crust.

Sprinkle the remaining oat crumble evenly over the tayberry filling.

Bake until the topping is golden and the tayberry filling is bubbling around the edges.
