Salal berry jam is a simple way to enjoy the deep, mildly sweet flavor of ripe salal berries. The dark berries cook down into a rich, glossy preserve that works well on toast, pancakes, yogurt or baked desserts. Because salal berries have a naturally dense texture, gently mashing them while cooking helps create a smoother jam while still retaining some fruit character. Fresh lemon juice brightens the flavor and balances the sweetness. For the best results, use fully ripe dark purple berries, wash them carefully and stir the jam frequently as it thickens.

- 4 cups Fresh Salal Berries
- 1.5 cups Sugar
- 2 tablespoons Fresh Lemon Juice
- 0.25 cups Water

Instructions
Wash the salal berries thoroughly and remove any stems or leaves.
