Hawthorn Berry Jelly

- 4 cups Fresh Hawthorn Berries
- 3 cups Water
- 1.5 cups Sugar
- 2 tablespoons Fresh Lemon Juice

Instructions
Wash the hawthorn berries thoroughly and remove all stems and leaves.

Place the berries and water in a saucepan and bring to a gentle simmer.

Cook until the berries become very soft, gently crushing them with a spoon as they cook.

Strain the cooked berries through a fine sieve or jelly bag, keeping only the clear fruit liquid and discarding the seeds and solids.

Return the strained hawthorn liquid to a clean saucepan and stir in the sugar and lemon juice.

Simmer the mixture, stirring occasionally, until it thickens and reaches a jelly-like consistency.

Remove from the heat, allow the jelly to cool slightly and transfer it to a clean jar.
