Blueberry Oat Pancakes
Fluffy blueberry oat pancakes made with fresh blueberries, rolled oats and a touch of honey.

Blueberry oat pancakes are a warm and satisfying breakfast that combines juicy blueberries with hearty rolled oats in a soft, fluffy pancake. The blueberries become slightly jammy as they cook, adding bursts of sweetness to every bite. These pancakes are ideal for breakfast or brunch and pair well with yogurt, honey or extra fresh berries. For the best texture, allow the batter to rest for a few minutes before cooking so the oats can absorb some of the liquid. Cook the pancakes over medium-low heat to ensure they become golden on the outside while staying tender inside.
