Achacha Lime Sorbet

Achacha lime sorbet is a refreshing frozen dessert that highlights the naturally sweet and tangy flavor of achacha fruit. Native to the Amazon region of Bolivia, achacha has juicy white flesh with a tropical flavor that pairs beautifully with fresh lime. This simple sorbet is perfect for warm afternoons, summer gatherings or as a light dessert after a meal. For the best texture, use ripe achacha fruit and chill the mixture completely before freezing. Stirring the sorbet during the first few hours of freezing helps create a smoother consistency if you are not using an ice cream maker.
Ingredients
- 2 cups Fresh Achacha Pulp
- 0.75 cups Water
- 0.5 cups Sugar
- 2 tablespoons Fresh Lime Juice
- 1 teaspoon Lime Zest

Instructions
Cut the achacha fruits open, remove the seeds and scoop the white pulp into a bowl.

Combine the water and sugar in a small saucepan and heat gently until the sugar completely dissolves.

Allow the sugar syrup to cool, then blend it with the achacha pulp, lime juice and lime zest until smooth.

Pour the mixture into a freezer-safe container and freeze until firm, stirring every hour during the first 3 hours for a smoother texture.
